Aquesta primavera anticipada també ha arribat a les Guilleries. Ja fa setmanes que no glaça de nit i els dies assolellats escalfen les plantes de bròquil de Santa Teresa que han estirat les tiges florals i ja són a punt d'obrir les primeres poncelles.

This year spring arrived early, even to Guilleries region. It's been already some weeks since the last frost. The sunny days warm the Santa Teresa broccoli plants, whose inflorescence stems have elongated with their first flower buds being about to open.

Aquest cap de setmana s'han eliminat algunes plantes de bròquil de Santa Teresa que havien crescut molt poc. Per si de cas, la seva herència genètica queda així esborrada.

This weekend some slow growing Santa Teresa broccoli plants have been removed from the field. Just in case, its genetic inheritance is thus erased.

En aquest blog es mostra tot el procés de llavor a llavor de la multiplicació de llavors de bròquil de Santa Teresa. Aquest procés es porta a terme en una finca aïllada per alzinar a les Guilleries, dins del municipi de Sant Hilari Sacalm. L'hivern fred fomentarà una bona selecció natural dels exemplars més tolerants a les gelades i l'aïllament del bosc protegirà els porta-granes de possibles pol·linitzacions creuades amb altres brassicàcies.

El 'bròquil de Santa Teresa', també anomenat 'bròquil blau', és una varietat tradicional de bròquil de color rosa que ja al 1874 apareix documentada, tal com es menciona en altres llocs.

Pel què sembla, la supervivència d'aquesta varietat ha estat amenaçada pel fet que la seva pol·linització creuada amb col-i-flors o bròquils verds cultivats a la seva proximitat origina descendència que ja no presenta la capça de color rosa.

In this blog the whole process from seed to seed to produce Santa Teresa broccoli seed will be shown. This process is carried out in a cottage isolated by holm oak forests in the Guilleries region, near Sant Hilari Sacalm. The cold winter will promote a good natural selection of most cold tolerant specimens and the isolation provided by the forest will protect the bolted plants from eventual cross pollination with other crops within the genus Brassica.

Broccoli 'Santa Teresa', also called 'Bròquil blau' (blue broccoli in Catalan) is a local Catalan broccoli variety which might have been referenced as early as 1874, as mentioned elsewhere.

The survival of this variety is said to be endangered by its crosspollination with nearby grown cauliflowers or green broccoli plants, whose resulting seed would yield broccolis not having the pink head anymore.

Les branques florals dels bròquils de Santa Teresa sembla que han aturat el creixement. I no és estrany tenint en compte que està glaçant cada nit, amb mínimes que ronden sovint els -5 ºC. El darrer vespre i nit ha fet una enfarinada de neu que no ha arribat a agafar.

The floral branches of the Santa Teresa broccoli plants look like they have stopped growing. Understandable since the frosts are taking place every night, with minimum temperatures often around -5 ºC. Last evening and during night it has being snowing, though only symbolically and the snow has not set.

La neu no ha agafat, però el fred que han de suportar els bròquils de Santa Teresa és intens.

Avui es tastarà el bròquil de Santa Teresa. I és que s'ha fet molt bé de reservar gran part de les inflorescències de les plantes per a què facin llavor, però no té sentit guardar llavor si paral·lelament no es pot comprovar que les plantes parentals són capaces de produir bròquils deliciosos.

Today the Santa Teresa broccoli is going to be tasted. Reserving a big part of the inflorescences of the plants for seed production is a good thing, but it does not make sense without ensuring in parallel that the parental plants are able to produce delicious broccoli heads.

S'han cuit al vapor i s'han tastat, només amb un raget d'oli d'oliva per sobre. Ni tan sols sal se'ls ha afegit. I s'han tastat. I....una delícia! Es fonen a la boca com la mantega. Tots. Confirmat doncs que val, i molt, la pena de guardar llavor d'aquestes plantes.

The broccoli heads have been steam cooked and tasted, only with a subtle olive oil touch. Not even salt has been added. They have been tasted and....delicious! They melt in one's mouth like butter. All of them. It's settled: the seed from these plants is worth saving!

Ja fa uns pocs dies que les nits de gener la temperatura baixa clarament per sota dels zero graus centígrads. Aquesta darrera nit, però, s'ha registrat una temperatura mínima per sota dels -8 ºC. S'havia tapat els bròquils amb un senzill plàstic durant aquesta nit, però no es farà gaires vegades més perquè no es malacostumin. Volem llavor de bròquils de Santa Teresa tolerants a les glaçades.

Since a couple of days, the night temperature in these January is dropping under zero Celsius. This last night, though, a minimum temperature under -8 ºC was registered. The Santa Teresa broccoli plants had been covered, though, for this night. But this will not be made very often. We want frost tolerant Santa Teresa broccoli seed.

Les capces dels bròquils de Santa Teresa s'estan començant a obrir. L'objectiu principal de cultivar aquest grup de bròquils a 1000 metres d'alçada a Les Guilleries és treure'n llavor. Però no té sentit guardar una llavor d'un bròquil que no s'ha tastat abans. El criteri de selecció és tant la seva resistència als rigors d'un hivern dur com les seves propietats organolèptiques.

The heads of the Santa Teresa broccoli plants are starting to open. The main goal of growing this group of broccoli plants at 1000 metres above the see level in the Guilleries region is getting seed from them. But it does not make any sense obtaining seed from a broccoli which has not been tested before. The selection criteria bear in mind both the tolerance of the crop to important frosts during winter as well as its organoleptic properties.

Com que volem produir llavor deixem una gran quantitat de branques laterals de la inflorescència a la planta. La prioritat és la llavor, no la quantitat de collita. 

Since we want to produce seed we let many side floral branches in the plant. The priority is the seed, not the amount of harvested broccoli.

The moment el criteri per a seleccionar les plantes porta-granes que faran la llavor és el seu vigor, la mida de la capça del bròquil i el seu estat de salut. Però els propers dies es farà un tast dels bròquils collits per si calgués eliminar-ne algun(s). No volem només bròquils vigorosos, també en volem gaudir assaborint-los.

The criterium for selecting the seed-producing plants is the vigour, the size of the head and the state of health of the plant. But during the next days the harvested broccoli heads will be tasted and a further selection could take place. We do not aim solely at getting vigorous broccoli plants. We also want to enjoy their tasting.

S'ha encetat any nou i a Les Guilleries les temperatures mínimes ja rasquen els 0 ºC, si és que no els depassen. Les plantes de bròquil de Santa Teresa van arribant al seu punt ideal, amb una capsa compacta i morada. A partir d'ara els seus caps es començaran a obrir. Aquest seria el moment ideal de la collita.

A New Year and in the Guilleries region the minimum temperatures are already around 0 ºC, if not under. The Santa Teresa broccoli plants are getting its ideal point, with a compact, purple head. From now on their heads will start opening. This is the ideal time for harvest.
